  Abstract: ‘Wheat’ is one of the staple ingredients in our kitchen. There are so many dishes that are made from wheat but what if the wheat flour we are using is adulterated? Think about it, there is refined and processed wheat flour and then there is organically harvested wheat flour in front of you, which one would you choose?  WHAT IS ‘SHARBATI’ WHEAT FLOUR?  Sharbati wheat is a regional kind of grain that is grown in the Sehore and Vidisha regions of Madhya Pradesh. This is why it is also called 'MP Wheat’. Its grains are bigger and have a golden luminance to them. M.P. Has black and alluvial fertile soil condition which is suitable for growing Sharbati wheat grains.  In a few regions of Madhya Pradesh that is irrigated via rainwater, Sharbati wheat soil has high potassium content and low moisture scope which causes the protein content of wheat flour about 2% high than that of conventional wheat flour.
